Homemade Granola

I've had this recipe on my fridge for months. We (Marshall) finally made it.
YUM!
So good, so easy and soooo much cheaper than buying granola in the store.
Also you can add what ever ingredients you want. We added dates and raisins.
Our receipt for the first four ingredients plus the dates was $13.78, and that will make us at least 4 more batches!

2 cups Regular Rolled Oats
1/2 cup Flaked Coconut
1/2 cup chopped or slivered Almonds
1/2 cup shelled Sunflower Seeds
1/2 cup Honey or Maple Syrup
1/3 cup Cooking oil

Combine Oats, Coconut, Almonds and Sunflower Seeds.
Combine Honey/Syrup and Oil, stir into Oat Mixture.
Spread evenly onto a greased baking pan.
Bake at 300' for 30-35 minutes or til lightly browned. Stir after 20 minutes.
Remove from oven and cool onto tin foil.
Break into clumps.
Cover tightly and store at room temperature for up to 2 weeks or seal in freezer bags and freeze for longer storage.
Makes 6 cups.

Next batch, dried Cranberries and brown sugar.

Home Sweet Home

If we had to be home, it couldn't have been a more perfect weekend. Nothing on the schedule and beautiful weather. It seems the whole neighborhood was out and about. There were so many kids at the park. Trent spent all weekend there. I recognized some of his old friends, but there we're so many new kids! The gang has created these great tag-like games. Trent is the youngest, but he can finally keep up.
Marshall was the meal man this weekend, Pancakes and Bacon for breakfast. For dinner, Island Soy Vey Grilled Pork Tenderloin, Pineapple, and of course....Pain Killers. I rarely drink. Not because of principal, or health reasons, mainly because I hate to pay for drinks. I drank more on our trip than I have in the last 3 years! My Mom makes a wicked Pain Killer! Its true, Rum is more abundant than water in the islands!

It seems including recipes is a popular blogging thing to do so I included the Pain Killer's recipe.

1 ounce Orange Juice
4 ounces Pineapple Juice
1 ounce Coco Lopez (coconut cream)
2 ounces Dark Rum
Mix well, pour over ice, sprinkle with nutmeg and top with a cherry.

We made them in a pitcher, so adjust accordingly. CHEERS!
